S

Stock

A clear thin liquid flavord by simmering bones, meat trimmings, vegetables and other aromatics such as peppercorns, parsley, bay leaves and thyme in water for flavor. A stock is not a finished product but a base for dishes. It does not contain salt and is used primarily to add dimension and flavor to dishes.

Sweat

To cook food over low heat with a small amount of oil or fat to release flavors without coloring or browning. It is best to use a lid to prevent browning. If the food starts to color add water to slow the cooking down.

T

Toast

To make crisp, hot, and brown by dry heat. Always toast seeds in a pan on top of the stove as they will pop. Nuts should be toasted in the oven.

U

Unsaturated Fatty Acids

Are fatty acids that contain one or more double bond. These include omega-3, omega-6, omega-7 and omega-9 fatty acids.

Vitamin A

Is a fat-soluble vitamin that was discovered in 1913. Vitamin A is a very important vitamin for maintaining a strong immune system, healthy skin, fertility, adrenal and thyroid functioning, structure and function of nerve cells, and cell growth but is best known for its role in the visual system. Butterfat and cod liver oil are two excellent sources of Vitamin A. This vitamin can also be formed from beta-carotenes and other carotenes found in vegetables such as dark leafy greens, squash, carrots and sweet potatoes.

Xerophthalmia

Is an inflammation of the cornea that is associated with a nutritional deficiency such as vitamin A.

Yam

Is a root vegetable that belongs to the Dioscoreaceae family. The name Yam is an African word for the root of the Dioscorea genus of plants. This sweet root vegetable is not the same vegetable as the sweet potato and is one of the oldest known plant foods. Yams are considered a staple food in many countries which include Africa, the Pacific Islands, South America and the West indies. Yams provide good sources of vitamins such as B1, B6 and vitamin C as well as manganese. Yams are considered a health supportive food for women because they contain phytoestrogen activity and are an excellent source of B6 which helps the liver to eliminate excess estrogen. Because of their detoxifying ability, Yams are considered to be beneficial in helping women relieve PMS symptoms as well as fibrocystic breasts.

Z

Zest

Is the outter skin of citrus fruit, such as that of a lemon, lime or orange, that has been removed by a peeler, grater, microplane or zester. Zest is only the colored portion of the citrus fruit skin and does not include the bitter white pith.
